N.O.S. is a brand name like Q-Tip and Velcro it stands for Nitrious Oxide System. A dry kit injects nitrous only into your motor and uses your car's fuel system to compensate for the nitrous. A wet kit injects both fuel and nitrous into your motor. It is personal preference on which one is better some say wet is better others say dry. I personally prefer wet. A shot is how much horsepower the nitrous is supposed to add, like 50 shot is a 50 hp increase etc.

To control the shots you have jets that regulate the amount of nitrous used
