I was wondering how the following mods would affect the reliability of my 2004 GT? Would my engine run hotter? Would I have any chances of blowing a gasket?

The mods I would like to do are the following:

CAI
High Velocity Throttle Body
HV3
PLOG
Ceramic Crossover
DP
Catback with no Cat with stock mufflers
PCM

Finally, how many extra ponies should I be getting with this setup?

tks

^^Bingo. TB is a waste and the catback will only get you a very small improvement based solely on that fact that you want to run catless, other than that it's just for noise. As far as extra ponies off of those mods.... in all honesty not much unless you did a custom tune for those mods. If you're concerned about engine heat, get a 180* thermostat and have your fan turn on points changed.

Reliability will be fine though. None of those mods change anything that much so you won't blow anything up.

yup and the loss in low end power is not realy that big of a deal

but to answer your question reliability will not be affected as you will still be making the same or less then a stock GTP
