You are right... but hey, it improves something in the car. And its a change to a stock tstat. Its a "mod" by all terms.

I guess I'm more excited about the fact that I am now putting things into my engine.

I got my 180 from advance for 9 bucks. and built my intake for 20 from lowes

I had a drilled thermostat, and up here, in Wisconsin, that's a mistake. When you have 120* coolant temps...yeah, that's just all sorts of bad.

A stock thermostat is 195 degrees, so a 180* will open sooner. In the winter, this is a benefit, as you can get heat sooner. In the summer, it will make the engine run cooler. In the past, I've run without a thermostat altogether, but that was in older V8 engines, and I'm unsure as to how a newer engine would handle it.
