I've restored those headlights 4 times now. Twice professionally. 2 months later and they are yellow again.
Maybe I should have swapped them while I was there.

Just get some yellow film and make them yellow on purpose

Or maybe get some blue film to balance the yellow back to white. That's what I would do in Photoshop to get them back to white.
