So ill start by wondering what i should my a/f at.? When at wot im currently at a solid 11.0 ive heard that is ok, im trying to get re-tuned locally but what other parameters should i be looking at on scans.. no kr either so thats good.

So this whole shooting flames thing, my friend chasing me as i race a g35 and said i shot flames as i down shift after i won.. about a good 5in out of both sides.. also from 1st to 2nd shift as well as huge "gun like" pops? Im guesing it because im running rich plus no cat and magnaflow straight thur mufflers..? once i get my hd hero ill try and get some shots lol

Sounds normal. Just a characteristic of a waste ignition system. I'm no tuning expert but 11:1 sounds right for your setup. You could try to lean it out if you want to as long as long as you're not knocking.

Heck my car shots flames on a stock tune and with a cat

11.0 afr is a very "safe" afr, assuming stock timing. Probably not optimal for power though. You may be able to go 11.5 or 11.7 depending on timing and intake manifold temps.
You want to monitor KR, Intake Air Temperature at the intake manifold (IAT2), and fuel trims as well as AFR.

^^^ I was just about to post that 11.0 is pretty rich for our cars. 11.7 to is the sweet spot if you don't have a intercooler.
